| Buffalo Queen | Very shiny, dark red-brown chestnut with a prominent stripe. It peels in hot water and has a good flavour when roasted. |

| Decopi Maroni | Best roasted because they are really easy to peel and have a smooth texture and sweet flavour.

| Purtons Pride | Also known as ‘Emerald Gem’. It is large with a distinctive orange-tan colour. Peels well when roasted and is tolerant to shell splitting. Good for peeling and serving whole in a sauce or as a vegetable accompaniment. Has a good sweet flavour. |

| Red Spanish | Very attractive large nut; shiny and relatively sweet. Better boiled than roasted and great for purees and soups.
