| Baby Green | A young asparagus picked in the early stages of development. They have a succulent, sweet, tender flesh and are good for fresh salads. |

| Green | Long, thick, dark green glossy spears with tightly closed heads are the best quality. Correct cooking results in vibrant green spears with a tender, crisp texture. |

| White | Spears are grown in the dark. When exposed to sunlight, they first turn pink and later, the familiar green colour. White is favoured in gourmet cooking due to its sweeter flavour and prestige appearance. |
